Making a good gelato is no simple matter, on the contrary!
Everything starts from the choice of the ingredients. We have literally gone round the whole of Italy, from the Langhe to the Amalfi Coast, via the small village of Calizzano, and after years of meticulous research we have found the right suppliers for our ingredients.
We want to offer an artisanal gelato dedicated to all those who love quality and in particular children, because it is healthy, complete and authentic.

We want to check every single phase of preparation, from the pasteurization to freezing. In our workshop we meticulously dose all the ingredients, with special attention to the ratio of fats and proteins, thanks to the freshly-milked milk we use that is delivered to us every morning.

Our gelato is periodically subjected to microbiological tests by the most authoritative institutes so that we can guarantee maximum food safety and it is naturally without hydrogenated plant fats, chemical flavours, colourings or preservatives.

At Pasqualina, gelato is a moment of pure pleasure: tradition and flavour are perfectly blended together, spoonful after spoonful.

Not many people use Calizzano chestnuts for gelato. It was love at first taste for us. With its delicate, soft and slightly smoky flavour, Calizzano chestnut gelato evokes the fragrances of villages in Liguria.

LUIGI ACETO: Amalfi Lemons
Luigi Aceto was born in Ravello on 12th June 1935. Although he is seventy-seven, he never stops. He gets up at five in the morning and goes home in the evening. "He spends all his time with his lemons," his wife says, half amused and half in despair. Luigi smiles and shrugs: "It's only when I'm with my lemons that I feel someone, because I recognise myself in them. When I'm in the midst of men I don't feel… as important." For us, Luigi represents Amalfi Lemons.

Ivan Avogadro: Freshly-milked milk
Ivan is 28 years old and leads the same life as his father and, before that, his grandfather. In the morning he gets up at 4.45, milks about fifty cows, cleans the barn, collects the milk and delivers it to the distributors. The cows are milked twice a day, three hundred and sixty-five days a year. The rest has to be done because "you have to guarantee freshness."
The work belongs to another age, but luckily not so long ago. He is the one who delivers the milk to us every morning, after milking.
